Squirrel Fish with Cassia Recipe
Ingredients:
- 2 squirrel fish (about 500g each)
- 2 tablespoons of cooking oil
- 2 tablespoons of cassia bark
- 2 tablespoons of Shaoxing cooking wine
- 2 tablespoons of light soy sauce
- 2 tablespoons of dark soy sauce
- 2 tablespoons of sugar
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 2 tablespoons of ginger, minced
- 2 tablespoons of scallions, minced
- 2 tablespoons of cornstarch
- 2 tablespoons of water
Instructions:
1. Wash the squirrel fish and pat dry with paper towels.
2. Heat the cooking oil in a wok or large skillet over medium-high heat.
3. Add the cassia bark and cook for 1 minute.
4. Add the squirrel fish and cook for 5 minutes, flipping once.
5. Add the Shaoxing cooking wine, light soy sauce, dark soy sauce, sugar, sesame oil, garlic, ginger, and scallions.
6. Cook for an additional 5 minutes, stirring occasionally.
7. In a small bowl, mix together the cornstarch and water.
8. Add the cornstarch mixture to the wok and stir to combine.
9. Cook for an additional 2 minutes until the sauce has thickened.
10. Serve the squirrel fish with cassia bark immediately. Enjoy!
